Description
The SUJIHIKI knife from the MIYABI 5000MCD series is a Japanese meat knife, featuring a hand-forged blade covered with up to 100 layers of various types of steel. The core of the blade is made from powdered MicroCarbide MC63 steel. Blades crafted in this manner are characterized by extreme hardness and a distinctive, unique damascus pattern. The highest quality raw materials and exceptional processing methods also ensure a very long lifespan for Miyabi tools.
Aesthetics and functionality guarantee not only an outstanding blade but also a special handle. Made from Masur birch wood, it has an ergonomic shape and perfectly complements the steel blade. The SUJIHIKI knife is especially suitable for slicing meats and fish, as well as carving exquisite roasts.
Its incredible sharpness is thanks to an exceptional processing method. The blade was hand-sharpened on two natural, rotating stones, then polished on leather strops. This method, called Honbazuke sharpening, makes the SUJIHIKI extraordinarily sharp and gives it a distinctive appearance. Knives made this way have excellent cutting and anti-corrosion properties and can be easily sharpened if necessary. With this excellent kitchen helper, all kinds of roasts or other meat dishes can be sliced quickly, easily, and effortlessly.
