The SUJIHIKI knife from the MIYABI 5000MCD series is a Japanese meat knife, featuring a hand-forged blade covered with up to 100 layers of various types of steel. The core of the blade is made from powdered MicroCarbide MC63 steel. These blades are characterized by extreme hardness and a distinctive, unique Damascus pattern. The highest quality raw materials and exceptional manufacturing methods also ensure a very long lifespan for Miyabi tools. Aesthetics and functionality guarantee not only an outstanding blade but also a special handle. Made from Masur birch wood, it has an ergonomic shape and pairs perfectly with the steel blade. The SUJIHIKI knife is especially suitable for slicing meats and fish, as well as carving exquisite roasts. Its incredible sharpness is thanks to a special manufacturing process. The blade is hand-sharpened on two natural, rotating stones, then polished on leather strops. This method, called Honbazuke sharpening, makes the SUJIHIKI exceptionally sharp and gives it a distinctive appearance. Knives made this way have excellent cutting and corrosion-resistant properties and can be easily sharpened when needed.
