Description
The Japanese Sujihiki knife from the Miyabi 6000MCT series is a versatile solution and an additional attraction in your kitchen. The long knife with an ergonomic handle is perfect for slicing meat and fish, and is also easy to clean. The wooden handle makes the knife comfortable to hold and facilitates cutting at various angles.
The blade core is made from very hard powdered steel, which is enclosed by two additional layers of steel. Special processing gives the blade a distinctive pattern. The blade is also treated through various hardening processes, including cryogenic hardening (CRYODUR®). This ensures a strong and durable edge. The knife has been honed using the double-bevel Honbazuke technique, providing a hardness of approximately 63 on the Rockwell scale.
A slightly curved handle made from dark brown wood features a traditional Japanese shape and fits comfortably in the hand. The internal handle pressure system ensures even ease of use across a wide range of cutting techniques.
