Description
Medium-sized CHUTOH knife from Miyabi is perfectly suited for carving, cleaning, and slicing various types of meat and fish. It features a thin, stable 16 cm blade that allows for full control throughout the entire food preparation process. This enables even the most precise cuts. These and other advantages have convinced chefs worldwide to choose it. The blade core is made from special MicroCarbide MC63 steel and is embedded in 100 layers of two of the hardest steel types. Additionally, the CRYODUR blade has been hardened by freezing it in -196°C ice. As a result, it achieves an exceptional hardness of approximately 63 HRC on the Rockwell scale. To achieve a “scalpel-sharp” edge, the Honbazuke honing method was used—employing the finest natural sharpening stones and then polishing on leather strops. The handle is traditionally shaped for Japanese knives in a D-shape. This ensures a comfortable grip, and the use of Masur birch wood adds an aesthetic touch. The soft grain patterns stand out clearly against the damascus pattern of the blade.
