Description
A medium-sized CHUTOH knife from Miyabi is perfectly suited for carving, cleaning, and slicing various types of meat and fish. This is thanks to its thin, stable 16 cm blade that allows for full control throughout the entire food preparation process. It also enables even the most precise cuts. These features, along with its entire range of advantages, have convinced chefs worldwide.
The blade core is made from special MicroCarbide MC63 steel and is embedded in 100 layers of two of the hardest steel types. Additionally, the CRYODUR blade has been hardened through ice quenching at -196°C. This results in an exceptional hardness of approximately 63 HRC on the Rockwell scale. To achieve a “scalpel-sharp” edge, a Honbazuke grind was used—crafted with the finest natural sharpening stones and then polished on leather strops.
The handle is traditionally shaped for Japanese knives in a D-shape, ensuring a comfortable grip. The use of Masur birch wood further enhances its visual appeal. The soft grain stands out clearly against the Damascus pattern of the blade. Small stainless steel accents and red lines make the SHOTOH knife from the MIYABI 5000MCD series a perfect combination of top quality, unparalleled sharpness, and stunning appearance.
