The original Japanese profile of the SUJIHIKI 5000FCD knife blade stands out not only for its beautiful damascus design. The blade is made from the highest quality exceptional steel with a high carbon content. Its FC61 steel core is embedded in 48 layers creating a stunning damascus pattern. The finishing, which guarantees the highest quality, involves double ice-hardening, ensuring the FRIODUR blade has exceptional hardness, excellent flexibility, and outstanding anti-corrosion properties. The blade's razor-sharp edge, comparable to a straight razor and measuring 24 cm, is achieved through a traditional hand-sharpening process on the finest natural sharpening stones, known as Honbazuke sharpening. The traditional D-shaped handle of this exceptionally aesthetic knife is made from Pakka wood, known for its excellent appearance, durability, and non-slip properties. The optimal ergonomics of the handle combined with the stiff, flexible blade provide perfect balance, enhancing comfort and reducing fatigue even during long hours in the kitchen.
