It is often used for preparing sushi — thanks to it, you can slice fish into perfect thin pieces. The Miyabi 5000MCT Shotoh series knife also impresses with its unique appearance, as it is produced through a special, highly complex process. Japanese forging technology has already been used to create samurai swords. The chef’s knife features the same strength and lightness as those legendary swords. The blade core, measuring 9 or 13 cm in length, is made from high-quality, exceptionally hard powder steel MicroCarbide MC63, embedded in 2 layers of steel. This ensures a hardness of approximately 63 HRC. These two layers give the blade an authentically hammered surface. The blade is ice-hardened, making it sturdy and durable.
