Description
The Japanese Shotoh knife from the Miyabi 5000MCD 67 series will make an elegant addition to your kitchen. It features a 13 cm length, a unique handle design, and a distinctive Damascus blade pattern. The polished black ash wooden handle has a similar grain to the blade. The Shotoh knife is perfect for slicing and peeling fruits and vegetables.
The blade of this ice-hardened (CRYODUR®) knife consists of 133 thin layers. They encapsulate the core of the steel plate (MicroCarbide MC66). During production, the blade undergoes a special hardening process to ensure hardness (66 on the Rockwell scale), providing a knife with excellent stability and a sharp edge. The knife gains a sharp tip thanks to the Honbazuke technique, a traditional Japanese process in which both sides of the blade are sharpened and polished in three different ways.
The knife has a D-shaped handle, allowing the blade to glide quickly and precisely over food, regardless of the cutting technique used, and it does not cause fatigue during prolonged use. The knife also has a balanced weight between the handle and the blade.
