Description
The Japanese Gyutoh knife from the Miyabi 6000MCT series is an ideal tool for professional chefs. It features a smooth blade measuring 16, 20, or 24 cm, perfectly suited for slicing fish and meat. Large vegetables are also no problem for this knife.
The blade is made from MicroCarbide powder steel and then subjected to a cryogenic hardening process (CRYODUR®) to achieve an extremely high level of hardness and sharpness. This steel is hand-forged, giving the blade a beautiful traditional Japanese appearance. The knife is sharpened to its final edge using the Honbazuke technique.
The ergonomically shaped handle is made from cocobolo, a dark, smooth wood that beautifully contrasts with the blade. The handle has a curved design for easy cutting. It is well-balanced, a standard feature of the MIYABI 6000MCT series. This balance allows you to work longer without feeling fatigue.
