Japanese kitchen knives are renowned for their exceptional sharpness and quality — precisely the qualities that chefs most appreciate in the kitchen. The special 20 cm blade is made from MicroCarbide MC63 powder steel, embedded in 2 layers of steel. Additionally, it features an incomparable appearance of Damascus steel, making each knife in the 5000MCT series unique. The special CRYODUR® heat treatment process ensures exceptional blade hardness — ice-hardened blades have a particularly precise cutting edge, are corrosion-resistant, and offer excellent flexibility. Japanese knives are incredibly sharp and impress with their world-famous precision. The blade is honed using the traditional Honbazuke method on both sides, resulting in a V-shaped edge that provides incredible sharpness on both sides.
