The special 20 cm blade is made from MicroCarbide MC63 powder steel, which is layered within two steel layers. Additionally, it features an incomparable Damascus steel appearance, making each knife in the 5000MCT series unique. The special CRYODUR® heat treatment process ensures exceptional blade hardness — ice-hardened blades have a particularly precise cutting edge, are corrosion-resistant, and offer the best flexibility. Japanese knives are incredibly sharp and impress with their world-renowned precision. The blade is honed using the traditional Honbazuke method on both sides, resulting in a V-shaped edge that provides incredible sharpness on both sides. The entire knife is perfectly balanced, allowing work without fatigue.
