Description
Firma Amedei was founded in 1990 by siblings Alessio and Cecilia Tessieri, and its name comes from their maternal grandmother's surname. It is a company with traditions that, after years of dedicated work, can boast producing one of the best chocolates in the world.
1990 THE BIRTH OF AMEDEI - Amedei's journey begins with a small artisan workshop in pursuit of perfection. The path is built step by step through studies, passion, and rediscovery of ancient processing methods. An adventure that reaches distant origins of cacao, where Amedei found the most valuable plantations and seeds in the world, establishing full control over the entire supply chain.
1998 TOSCANO BLACK 70 - The raw material, initially selected by Amedei, is delivered directly to Tuscany, a land of creativity and genius, to be transformed into small works of art through skillful dosing and manual processing of a few selected ingredients. This is how Amedei's first signature creation, Toscano Black 70, was born—a perfectly balanced 70% extra dark blend with a unique aromatic profile featuring notes of tobacco, roasted malt, and cedar wood.
2008 TOSCANO BLACK 63 - Amedei wins its first Golden Bean award for Toscano Black 63 at the Academy of Chocolate in London, one of the most qualified international institutions in the chocolate world. Over the years, the same Academy awarded Amedei chocolates the highest number of Golden Beans in history.
2012 BLANCO DE CRIOLLO - Deep expertise combined with creative genius in experimenting with modern blends led Amedei to introduce Blanco de Criollo to the market. Thus was born a vintage chocolate where the pursuit of the wildest and most aromatic cacao is combined with the love of those who know how to tame it and turn it into chocolate for true connoisseurs.
2018 ACERO 95 - In the laboratory, the tradition of meticulous manual work merges with innovation. Amedei challenges its own philosophy and wisdom by creating a 95% dark chocolate with a strong and sweet flavor. The absolute innovation of this product lies in replacing cane sugar with maple sugar, a valuable ingredient with a refined sweetness.
2019 TOSCANO BROWN - Amedei's Toscano Brown wins the “La Tavoletta D'oro” award as the best Italian milk chocolate at La Compagnia del Cioccolato. The prestigious Tavoletta D'oro is the eighth accolade that the Italian artisanal chocolate company has received for its first milk chocolate bar.
Where does the cacao come from / How is Amedei chocolate made?
The founders of the brand have always aimed to produce their own chocolate directly from cacao beans. Amedei Schokolade sources cacao beans from selected plantations around the world. Additionally, the factory was the first in the world to process cacao beans from the famous Chuao region north of Caracas. The beans harvested there are still of pure variety and have not been crossbred with others, as the plantation is only accessible from the sea side.
An artisan from Pontedera oversees the entire production chain, selecting the most sought-after raw materials, and processing them using ancient methods to revive exquisite creations made from a few high-quality ingredients: cacao beans (such as Criollo and Trinitario), cane sugar, carefully chosen milk, and fruits. Mastery in cacao processing results from years of agronomic knowledge and experimentation. Thanks to artisanal methods, Amedei transforms the rarest cacao beans in the world into true chocolate masterpieces. Amedei creates harmony between ingredients, textures, and aromas, giving life to chocolates with a unique aromatic profile. Italian know-how, where elegance, simplicity, and a passion for chocolate combine into a flavor that reflects the magic of the country where it was created: Tuscany.
What makes Amedei products stand out?
Almost all Amedei chocolate bars have already received several international awards: the chocolate made from beans from the Chuao plantation was awarded the Academy of Chocolate in London in 2005 for the best chocolate in the world. Every year, new products in the range are repeatedly recognized. Among the most popular is Amedei Porcelana: Porcelana is a variety of Criollo and almost the progenitor of all cocoa. The bean from very low-yielding and particularly sensitive plants offers an extraordinarily rich aroma and a very distinct flavor, to the extent that connoisseurs from around the world appreciate it. The name refers to the light color of the bean, which makes the bar resemble milk chocolate, but also helps to understand how delicate and precious this cocoa is — unique on a global scale.
Amedei is an artisan bean-to-bar chocolate producer based in Pontedera, Tuscany. The culture of chocolate, its tasting, and its combinations are important cornerstones upon which the company is built. Every Amedei chocolate creation contains emotion, passion, and great dedication to chocolate. At their Maison Amedei, they oversee the entire cocoa supply chain: from bean selection, through roasting, to the creation of the final chocolate of true excellence. Each chocolate product is made from the rarest Criollo or Trinitario cocoa beans and other high-quality raw materials: cane sugar, milk, and selected fruits. Soy lecithin, artificial colorings, or flavorings are not used. Amedei chocolate processing is not industrial but purely artisanal, based on years of experience and deep knowledge of the cocoa world. Every cocoa bean is transformed into a work of chocolate art: bars, pralines, spreads.
