For this cheese, which originates from Italy, we recommend a knife straight from the Italian manufacturer - Saladini.
This company has gained experience through centuries-old tradition. It is located in the Italian town of Scarperia. The literal meaning of this name is "city of knives." Here, talents related to the craft of knives have been dormant since ancient times. This craft was perceived as an ancient form of art.
Alongside a series of traditional knives, Saladini offers a wide range of kitchen knives, table accessories, cutlery, as well as corkscrews and cigar cutters. Each product is crafted with great care, with attention to every detail.
The Coltelleri Saladini manufactory produces kitchen knives with forged blades. Each blade has the manufacturer's logo engraved - a confirmation of authenticity and a guarantee of quality. The marking is done during crafting, when the blade is not yet hardened.
Saladini is very selective in choosing steel - it mainly uses high-quality hardened stainless steel with high or 100% carbon content.
For blade production, Saladini uses two main processes: quenching and forging.
Quenching is used to create knife blades, cigar closing cutters, and a certain line of table knives. These blades are cut from steel plates, the thickness of which depends on the intended use of the knife.
The most complex production process is undergone by forged blades using a hammer and anvil, which are used for kitchen and table knives as well as collectible ones.
Hand forging allows for the creation of appropriate shapes of blades, bolsters, and tangs, which will be inserted into the handle.
After marking, both types of blades undergo hardening and annealing in heat treatment, which, depending on the steel composition, determines the correct degree of hardness for an optimal cutting edge.
