Parmesan is a type of rennet cheese originating from northern Italy. Although it is hard, the Saladini knife will certainly make slicing it easier.


Coltelleria Saladini manufactures kitchen knives with forged blades. Each blade features an engraved logo of the manufacturer — a mark of authenticity and quality assurance. The marking is done during the craft process, before the blade is hardened.

Saladini is very selective in choosing steel — mainly using high-quality hardened stainless steel with high or 100% carbon content.

Saladini primarily uses two processes for blade production: quenching and forging.

Quenching is used to create knife blades, cigar cutters, and certain lines of table knives. These blades are cut from steel sheets, with thickness depending on the intended use of the knife.

The complex manufacturing process involves forging blades with a hammer and anvil, which are used for kitchen, table, and collector’s knives. Hand forging allows for creating the appropriate shapes of blades, handles, and bolsters, which are then fitted into the handle.

After tempering, both types of blades undergo heat treatment involving hardening and annealing, which, depending on the steel composition, determines the proper hardness for an optimal cutting edge.
