De Carlo is a family company with roots dating back to 1598. All historical information comes from public documents stored in the State Archives in Bari, the Onciario Census, and Tax Records of Bitritto, the National Library of Bari, and a private family archive. The history of De Carlo products was born, evolved, and continues here, day by day, amidst centuries-old olive trees owned by the family, dry stone walls, a region with a characteristic scarlet hue, Mediterranean climate, and white stones. The favorable climate of the region, especially north of Bari, has always contributed to the extraordinary flavor of the olive oil with a noticeable almond note.
Thick trunks and deep roots: centuries-old olive trees are symbols of Apulia, where most of the olive oil consumed, loved, and appreciated in Italy and worldwide has been produced for over three thousand years. Although the oldest evidence of olive use dates back to prehistoric times, the first to cultivate olive trees in Apulia were probably the ancient Messapians.
Olive oil produced in traditional stone mills
The De Carlo farm currently spans 100 hectares, with a total of 18,000 olive trees and vegetable crops, the latter used for canning. All De Carlo products are made respecting tradition and craftsmanship, with a strong focus on building state-of-the-art facilities. Olive oil is still produced in traditional stone mills, as it was in the past, integrated with modern, technologically advanced systems.
Eco-friendly production at the De Carlo farm
The De Carlo family has been producing organic products since the early 1990s, deeply believing that consumer health should come first. Currently, the entire farm is managed organically, even if only part of the production is certified as such.
The De Carlo brand produces 5 labels, three of which come exclusively from their own olive groves: Tenuta Torre di Mossa DOP, Tenuta Arcamone DOP from organic cultivation, Felice Garibaldi olive oil, which is part of the Slow Food Presidium, and two selections from carefully chosen local producers: Classic and Contrada Torre Marina from organic farms. All five selections are made from olives harvested in the Bitritto area. A line of vegetable preserves in extra virgin olive oil, marinated olives, pasta sauces, and delicate creams has also been created, available in both conventional and organic lines using their own vegetables. All pickled vegetables are sourced from their own crops and processed within 24 hours of harvest.
Manufaktura holds the ICEA certification for Europe and USDA Organic 100% for the USA. To strengthen the food safety system, the H.A.C.C.P. system has been integrated with product control systems such as BRC and IFS, to track all flows within the manufacturing plant. Additionally, the company's policy focuses on a short supply chain: most raw materials come from its own fields.The De Carlo family has always believed in the value of combining innovation and tradition, which has led to their success. The delicate product range includes various types of oils, olives, pickled vegetables, and spices.

In 1938, Mariano Mancini founded Azienda Agricola Mancini, which was later expanded by his son Giuseppe from 5 hectares to 70 hectares, combining farming with the development of the footwear sector. He also passed on to his son Massimo the values of reliability and resilience, which enabled him to pursue his own dreams. Massimo Mancini graduated in agricultural sciences in Bologna under the guidance of Giorgio Stupazzoni, an economist specializing in pasta production chains. This was the birth of the dream of a pasta manufacturing company.
In 2010, Massimo Mancini established Mancini Pastificio Agricolo, where pasta is produced exclusively from wheat grown on his own fields surrounding the brand. Some call it a company nestled among wheat fields spanning 300 hectares.

Good Agricultural Practice is a set of features that Mancini Pastificio Agricolo applies to ensure environmentally friendly and sustainable agricultural management, aiming to produce raw materials of the highest quality and healthiness with minimal environmental impact and zero chemical residues.
The goals of Good Agricultural Practice are:
- to respect natural resources (air, water, soil) through optimized agronomic interventions and rationalized external inputs;
- to produce high-quality raw materials that are most suitable for our transformation process;
- to ensure the health safety of the final product.
This is achieved through continuous crop monitoring and implementing self-control measures during the production process, such as frequent soil, plant, and pathogen analyses. Crop rotation is practiced to maintain and improve soil fertility, alternating with durum wheat cultivation combined with improving crops (alfalfa, clover, vetch, peas, chickpeas) or renewing crops (sunflower).
The packaging material used for the pasta is the result of ongoing research with industry experts to ensure the best possible preservation of the pasta combined with maximum recyclability of the packaging. Made solely from cellulose derived from wood from forests managed according to strict environmental, social, and economic standards (FSC® mark), the bag can be completely disposed of with paper. The ATICELCA® 501 UNI 11743 method certifies its recyclability level.
